Willing Worker's Recipes

Eggs Florentine Casserole

1 package (10 oz) frozen chopped spinach (you can use fresh)


6 large eggs


8 oz swiss cheese (you can also use shredded cheddar, or a combination of both swiss and cheddar)


8 oz feta


16 oz creamed cottage cheese (any regular cottage cheese will work)


1/2 stick butter or margarine, melted and cooled


dash of nutmeg


hot pepper sauce to taste (you can use paprika instead)


Preheat oven to 350 degrees.  Cook frozen spinach in a pan until tender.  Drain well and set aside.  Beat eggs, then add cheeses and butter.  Mix thoroughly, then add spinach.  Sprinkle with nutmeg and hot pepper sauce (or paprika).  Pour egg mixture into a greased 9x13 inch baking dish.  Bake for 40 minutes.  (may take a few minutes longer, depending on your oven).  It's ok if it looks a little underdone when it comes out of the oven.  It will finish cooking as it sits.  Cut into squares and serve.


Tip: the dish can be prepared a day in advance and refrigerated.  Remove from fridge 30 minutes before baking. (we think it tastes better when prepared in advance, and is allowed to sit in the fridge overnight)
